Bacon 'n Zucchini Sauce on Pasta

Ingredients: As my sister, Sue Ann, and brother-in-law, Bill Polakowski, grow the biggest zucchini in their garden I've ever seen, I'm always looking for great zucchini recipes.
(4 cups) rice or pasta
1/2 lb bacon, cut into 1-1/2 inch pcs
1 large onion, cut into 1/2 inch wedges
2 large garlic cloves, minced
2 small zucchini, cut lengthwise, sliced
1 (28 oz) can crushed tomatoes, undrained
1 (19 oz) can cannellini beans, rinsed/drained
1 tsp brown sugar
Directions:
  1. In large skillet, cook bacon until crisp; discard bacon drippings.
  2. Add onion and garlic to bacon in skillet.
  3. Cook over medium-high heat for 1 to 2 minutes or until onion begins to brown.
  4. Add zucchini; cook l minute.
  5. Stir in tomatoes, beans and brown sugar.
  6. Cook over medium heat for 10 to 12 minutes or until thoroughly heated, stirring occasionally.
  7. Cook rice ahead using the following directions.
  8. Cook rice 2 parts water/1 part rice to boil.
  9. Stir rice and put on lowest heat to simmer for 30 min; cover.
  10. Rice should be fluffy, not dry.
  11. Drain rice. Pour tomato mixture over rice to taste.
  12. Makes 6 (1-1/3 cup) servings.
