Marsha's Philadelphia Cream Cheese Pie

Ingredients: Marsha Horwitz, an old friend from my Penn State days, gave me this recipe.
  • For Crust:
2 oz butter (half of a quarter    pound of butter softened)
1 egg
4 tbsp sugar
1 cup of flour
1/2 tsp baking powder
pinch of salt
  • For Filling:
8 ozs cream cheese
9 tbsp sugar
2-1/2 tbsp flour
2 beaten eggs
2 cups of milk
1-1/2 tsp vanilla
juice of half a lemon
Directions:
    • For Crust:
  1. Mix and mash butter and egg together.
  2. Mix dry ingredients together.
  3. Gradually add to butter mixture, mixing thoroughly.
  4. Grease pan.
  5. Form a ball with crust mixture.
  6. Pat crust into pan with fingers.
  7. Double the crust recipe if a thicker crust is desired. I do.
    • For Filling:
  1. In separate bowl mash cream cheese, flour and sugar. Blend well.
  2. In another bowl beat eggs, milk, lemon juice and vanilla.
  3. Add milk mixture to cheese mixture, mixing until smooth.
  4. Pour filling mixture into crust.
  5. Sprinkle with cinnamon.
  6. Bake at 325 degrees for 1 hour, 15 minutes.
  7. Note: This varies with oven and altitude, so do knife test. When it comes out clean, it's done.
    Crust will be lightly browned also.
  8. Cool on rack.
