Nuala's Salmon 'n Leeks in Cream Sauce

Ingredients:
1/2 tsp tomato puree
4 ozs sliced/smoked salmon (Brand: Lasco)
1/2 pt unsweetened whipping cream
1 large leek or bunch of small green onions
3 medium sized tomatoes
1 small carton of mushrooms
1 cup dry Marsala wine (or more, if needed)
Directions:
  1. Chop leek, tomatoes, and mushrooms into small pcs.
  2. Saute leek in olive oil.
  3. Add mushrooms and tomatoes to heat up.
  4. Add salmon after cutting into bite-sized pcs.
  5. Stir above then add cream.
  6. Add 1/2 tsp tomato puree for color.
  7. Serve over Penne Pasta or Rigatoni.
  8. Serves 3
