Ingredients:
1/4 cup of soft butter
1/2 cup of sugar
1 cup of flour
2 tsp of baking powder
1/4 tsp salt
1/2 cup of milk
1 (#2) can of peaches (or substitute blueberries for Blueberry Cobbler)
1/4 cup sugar for sprinkle
1 cup fruit juice or remaining blueberry juice
Directions:
Preheat oven to 375 degrees.
Cream sugar with butter.
Stir sifted dry ingredients in alternately with milk.
Beat until smooth.
Pour into loaf pan or 2 quart casserole.
Spoon fruit over batter.
Sprinkle with sugar.
Pour fruit juice over top.
Bake 45 to 50 minutes at 375 degrees.
Serve with whipped cream.
Cake will rise to top.

Try this great drink for a special dinner - Aunt Peg's SANGRIA Ingredients: Juices of 2 limes, 1 lemon and 2 oranges; 1/4 cup confectioners sugar, 1 bottle red wine; 6 ounces or more club soda. Directions: (1) Mix juice, sugar and wine. Set to blend in refrigerator for an hour or more. At the last minute, pour in the club soda and a dozen ice cubes. Stir briefly and serve in highball glasses. (2) Traditional garnish is a slice of lime or orange and a curlicue of thinly peeled cucumber rind. Makes four servings.
