Ingredients:

1/2 tsp tomato puree
-
4 ozs sliced/smoked salmon (Brand: Lasco)

1/2 pt unsweetened whipping cream
-
1 large leek or bunch of small green onions
-
3 medium sized tomatoes
-
1 small carton of mushrooms
-
1 cup dry Marsala wine (or more, if needed)
Directions:

Chop leek, tomatoes, and mushrooms into small pcs.

Saute leek in olive oil.

Add mushrooms and tomatoes to heat up.

Add salmon after cutting into bite-sized pcs.
-
Stir above then add cream.
-
Add 1/2 tsp tomato puree for color.
-
Serve over Penne Pasta or Rigatoni.
